With a burst of electricity, a young acidic wine can be rapidly aged, creating something more mellow and aromatic. This 'electrified wine' even passed the ultimate test- a blind tasting test by a panel of wine experts!
So promising are the results, that no fewer than five wineries have invested in the technology which could allow them to get their wines into the shops faster and cut the costs of storage.
The experiment took place at the South China University of Technology, where Xin An Zeng, a Chinese chemist, pumped wine through a pipe that ran between two titanium electrodes, fed with a high voltage electric current. The wine was a three-month-old cabernet sauvignon from Suntime Winery - China's largest producer.It was sampled by a panel of wine tasters who felt the once 'harsh and pungent raw wine' had become 'harmonious and dainty'. Analysis showed the chemistry of the wine had changed, making it less acidic and more fruity and fragrant.
Five Chinese wineries have begun trials. Which is a very good idea given the fact that most Chinese wines today are basically just 'grape juice with alcohol'.
